Note: This versatile vinaigrette can be used to dress salads, top sliced tomatoes, or marinate meats before grilling.
Ingredients:
- 3/4 terra medi balsamico vinegar
- 1/2 terra medi red wine vinegar
- 1/4 thyme honey
- 2 c terra medi ORGANIC extra virgin olive oil
- 1 tsp Greek oregano
- salt and pepper to taste
- 3 lemons, juice and zest
Method:
In a non-reactive bowl, combine the vinegars, honey, oregano and a pinch of salr and pepper. Using a wire whisk, slowly add the extra virgin olive oil in a slow steady stream whisking vigorously until all the oil is incorporated. Continue mixing for 30 seconds more. Taste and season again with salt and pepper. Refrigerate for 1 hour before using.
Yield: Serves 1 quart
