Ingredients:
  • 8 tablespoons Terra Medi Extra Virgin Sesame Oil
  • 4 large slices of bread or 8 small slices
  • 2 cloves of garlic cut in half
  • 1 1/3 cup mixed cultivated Porcini and Portobello mushrooms
  • 2 tablespoons finely chopped basil
  • 4 slices 1% low fat goats milk cheese
  • 1 teaspoon Terra Medi Balsamic vinegar
  • Pinch of salt
  • Pinch of fresh ground pepper
  • Grape tomatoes for garnish
Directions:
  1. Wash mushrooms and marinate them with Terra Medi sesame oil. Grill mushrooms until soft.
  2. Brush both sides of bread with Terra Medi sesame oil and grill until toasted. Rubbing them every so often with garlic cloves.
  3. Lightly grill cheese on both sides and place on top of bread.
  4. Place grilled mushrooms on top of cheese.
  5. Mix remaining Terra Medi sesame oil, with Terra Medi vinegar basil, salt and pepper. Pour over bread mushrooms and cheese.
  6. Garnish with tomatoes.
