Ingredients:
- 8 tablespoons Terra Medi Extra Virgin Sesame Oil
- 4 large slices of bread or 8 small slices
- 2 cloves of garlic cut in half
- 1 1/3 cup mixed cultivated Porcini and Portobello mushrooms
- 2 tablespoons finely chopped basil
- 4 slices 1% low fat goats milk cheese
- 1 teaspoon Terra Medi Balsamic vinegar
- Pinch of salt
- Pinch of fresh ground pepper
- Grape tomatoes for garnish
Directions:
- Wash mushrooms and marinate them with Terra Medi sesame oil.
Grill mushrooms until soft.
- Brush both sides of bread with Terra Medi sesame oil and grill until toasted.
Rubbing them every so often with garlic cloves.
- Lightly grill cheese on both sides and place on top of bread.
- Place grilled mushrooms on top of cheese.
- Mix remaining Terra Medi sesame oil, with Terra Medi vinegar basil, salt and pepper.
Pour over bread mushrooms and cheese.
- Garnish with tomatoes.
